Fluffy Vegan Pancakes

Ingredients
400g gluten free flour
60ml Date syrup
2 tsp baking powder
1 tsp vanilla
400ml plant milk (e.g. oat milk)
2 tsp apple cider vinegar
50ml coconut oil

Preparation
Mix all the dry ingredients in a bowl. Mix the vanilla, plant milk and apple cider vinegar and leave to stand for 5 minutes. Then fold in the dry ingredients using a spatula.

Heat a frying pan to medium heat and add 2 tablespoons of the batter at a time. Only turn when light bubbles appear. Bake each side for approx. 1 minute.
